Spring Garden Vegetable Sandwiches

Prep Time: 15 minutes

Makes: 2 servings

4 tablespoons Neufchâtel cheese, softened
4 Slices Pepperidge Farm® 100% Natural Honey Flax Bread, toasted
1 medium cucumber, peeled and thinly sliced (about 1 2/3 cups)
2 medium carrots, shredded (about 1 cup)
1 cup spring salad mix
1 green onions, thinly sliced (about 2 tablespoons)
3 tablespoons  sun-dried tomato salad dressing

  1. Spread the cheese on the bread slices.

  2. Arrange the cucumber on 2 bread slices. Place the carrots, spring mix and onions in a medium bowl. Add the dressing and toss to coat. Top the cucumber with the carrot mixture and the remaining bread slices.

Quick & Easy No Guilt Berry Shortcake

Prep: 10 minutes Bake: 40 minutes Cool: 1 hour 30 minutes Serves: 12

Make your own cake so you can enjoy the berry flavor within it. The rest is really easy and so rewarding.


Ingredients
1 box (16 ounces) angel food cake mix
1 1/4 cups Diet V8 Splash® Berry Blend Juice Drink
6 cups fresh (cut-up strawberries, and raspberries)
1 1/2 cups thawed light whipped topping

  1. Heat the oven to 350°F.

  2. Prepare the cake mix according to the package directions, substituting the juice drink for the water.

  3. Pour the batter into a 10-inch tube pan.

  4. Bake for 40 minutes or until the top is golden brown and springs back when lightly touched with a finger. The cracks in the top of the cake should look dry. Invert the cake in the pan and hang upside down on a funnel or heatproof glass bottle for about 1 1/2 hours to cool completely.

  5. Loosen the cake from the pan with a metal spatulal.

  6. Cut the cake into 24 slices. For each serving, place 1 cake slice on a serving plate, top with 1/4 cup berries and 1 tablespoon whipped topping, top with another cake slice, 1/4 cup berries and 1 tablespoon whipped topping.

  7. Repeat with remaining cake slices, berries and whipped topping
